Chocolate is the best breakfast.

Facebook wouldn't let me post anything. I think its partly FireFox/ my computer being stupid. Anyways Steph wanted the recipe for my made up gluten free chocolate protein pancakes so here goes...


Chocolate (Gluten Free & Vegan) Protein Pancakes

1/2 cup Buckwheat flour
1/4 cup Almond flour
1/4 cup Quinoa flour
1/3 cup (approx 1 serving- 1 big scoop) of chocolate protein powder*
2 tbsp cocoa
1 tsp   baking soda

1/2 cup unsweetened apple sauce**
1 1/2 cups almond milk***

Chocolate chips optional :)

Mix all dry ingredients .
Make a well in the centre and add apple sauce and slowly mix in almond milk.
You may need to adjust the amount of almond milk based on the amount of protein powder added.
Batter should be fairly thick.

Cook on a griddle. You can add a bit of oil (1 tbsp) to the batter to make sure it does not stick but on a griddle it wasn't necessary .  Makes approx 8 medium sized pancakes.
Serve with your choice of toppings. Strawberries and coconut milk  are delish! (or top with vegan whipped cream (chocolate covered katie has a couple different recipes))  

*I used Double Chocolate Vegan Protein + (Made by genuine health)
** You could substitute with mashed banana for chocolate banana pancakes
*** Almond milk or any other dairy free milk of choice.


Here is some more info from  Nourishing Flourishing on almond flour is also has a link to a tutorial on how to make it just in case. : )   If you dont have all of those flours I'm sure you can experiment with different ones. I just used what I had on hand.

"I can tell that we are going to be friends"



Hi girlies! I approve of this plan to get the blog going again. First of all: I miss you all.
Second: updates... I'm done undergrad now? I finished last semester in August (all of us did because of the co-op schedule)... senior year was pretty busy. I worked at a consulting company for most of first semester, and then had class + Capstone (final design project, the Engineering equivalent of a fourth-year thesis) for the next two. I got my iron ring in July (there's me at the ceremony with my raaang), and finished exams at the end of August, and then convocated three weeks ago. I hated my school portraits (the one they put in the composite) and I wanted to get them re-done on that day, so instead of going to a studio Rebecca hired a photographer to come and do them on campus that afternoon, so some of those pictures are down there.


Wow this post is so narcissistic, I love it. And now, I'm taking a bit of a break and shopping too much and working at the school board tutoring at a few schools (again) and working on my grad school apps, which are due within the next few months and turning into more time and energy than I'd bargained for.




Now... what's going on with you ladies? Twins, are you coming home this Christmas at all?
